Red Cabbage Sauerkraut Salad

Autumn must have.

Red Cabbage

You will need:

1kg cabbage (white or red), finely chopped
4-5 carrots, graded
2 garlic cloves, chopped
pepper and cumin seeds

For the sauce:

1000ml water
2 tbsp salt
1/3 cup of sugar
1/3 rapeseed oil
100ml cider vinegar

Chop the cabbage and garlic, grade the carrots and mix it all well adding pepper and cumin seeds. In a separate pan heat the water, sugar, salt, oil and vinegar till boiling. Then take it of the heat and pour over the cabbage. Cover and leave the cabbage in a room temperature for 2 days, then put in a glass jars with lids and store it in the fridge. Simple but very tasty sauerkraut salad, perfect with meats or potatoes.
