Cabbage Soup

Great filling and healthy lunch.

Cabbage Soup

You will need:

half of green cabbage, chopped
2 leeks, chopped
300g potatoes, peeled
handfull of fresh green beans
1 stock cube
1200ml water
1 tbsp tomato puree
low fat sour cream to serve

Chop the cabbage, leeks and green beans, cut the potatoes into small cubes. Add the veg, stock cube, tomato puree in large saucepan and cover with 1200ml of water. Bring it to boil and then reduce the heat to simmer and cook for about 25 – 35 minutes till all your veg is cooked. Service it topped with sour cream.
