Healthy Breakfast Cake

High protein, sugar free, delicious for breakfast.

Breakfast Cake

 

You will need:

500g low fat cottage cheese
100ml almond or coconut milk
30g polenta
50-70g xylitol (I used Total Sweet)
1 egg or 1 egg white
1 tsp lucuma powder
1 tsp vanilla extract
1 tsp low fat spread

Topping:

yogurt or sour cream
reduced sugar jam

Ad all the ingredients in a food blender and blend till its reached even consistency (I used Kenwood blender).  Pour the mixture in silicone mould and bake in the oven at 180 degrees for about 50-60 minutes. When baked cut it in 4 squares, can top it up with yogurt, sour cream, low sugar jam to serve.
