Healthy Savoury Muffins

Great for afternoon tea 🙂

Healthy Savoury Muffins

 

You will need:

275g self raising flour
1tsp baking powder
130g sweet potato, graded
175ml coconut milk
100g spinach
2 eggs
2 tbsp coconut oil (I used Vita Coco oil)
pinch of salt

Preheat oven to 180C degrees. You will need either 12 hole muffin tray or single silicone muffin trays, lined with paper baking cases. In a large bowl cover the spinach with boiling water and leave it for a minute, then drain is, squeeze excess water and chop finely. Whisk the eggs, milk and coconut oil, then add the flour, baking powder, salt, sweet potatoes and spinach, stir till combined. Spoon the mixture in to muffin holes evenly and bake it for about 25 minutes. Leave it to cool and enjoy!

These muffins very similar to scones and its delicious with some butter or soft cheese.
