Reduced Sugar Mango Jam

You will need:

2 mango’s finely diced
1 pineapple finely diced
500g sugar
2 tablespoons lemon juice

6-8 190ml Jars
Jar decorations

Finely dice mango’s and pineapple, if you want chunks or you could blend it for finer jam, (fruits can be different size, so best to weight them when diced and then add 40% sugar) pour it in a large sauce pan then add sugar and lemon juice. Bring it to boil, skim off any scum that comes to the surface, cook on low heat for about 30min – 1 hour, till thickens. Take it of the heat, transfer to sterilised jars, then leave to cool upside down, covering your jars with the blanket. When the jars cold turn them back around and keep in dark cool place for 3-6 months, refrigerate once opened.
