Miso Roasted Aubergine

Aubergine Japanese style.

Miso Roasted Aubergine

You will need:

1 aubergine 
20g miso paste
2 tsp water
1 tsp reduced salt soya sauce
1 tsp xylitol (I used Totally Sweet)
1/2 tsp coconut oil
black and white sesame seeds

Set the oven to 180°C. Slice the aubergines in half lengthways. Line a baking sheet with greaseproof paper and lay the aubergines. Mix the miso, xylitol, reduced salt soy sauce, coconut oil with 2 teaspoons of water to make a smooth paste. Brush over the aubergine flesh and roast for 25 minutes until soft. Sprinkle with the sesame seeds and serve.
