Low Fat Goan Prawn Curry

Beautiful Prawn Curry.

Prawn Balti

You will need:

Light Oil Spray ( I used Frylight)
1 onion, thinly sliced
1 tbsp freshly grated ginger
1 cloves garlic, crushed
1 red chilli, seeded and sliced
1.5 tbsp Balti Curry Paste
150ml Reduced Fat Coconut Milk (from the can)
3 classic vine tomatoes, roughly chopped
100g baby button mushrooms
1/2 tsp cumin seeds
2 tbsp chopped coriander
100g Baby Spinach
150g Raw King Prawns

Fry the onions, ginger and garlic till browned, add the curry paste, coconut milk and tomatoes, simmer gently for 10 minutes. Stir the spinach, prawns, coriander into the curry and cook for another 10 minutes until the prawns are cooked and the spinach has wilted. Serve with naan bread or rice.
