Quinoa Salad

Very easy to make healthy grain salad.

Quinoa Salad

You will need:

1 tricolour quinoa pack (I used Merchant Gourmet)
1 carrot, diced
1 small broccoli, cut into florets
1 tsp rapeseed oil (i used Borderfields Cold Pressed Rapeseed Oil)
handful of goji berries

Cook quinoa as instructed on the packet. Fry carrot and broccoli, add little bit of water to frying pan and cook till softened, then mix it all together, drizzle rapeseed oil and sprinkle goji berries. Enjoy!
