Stuffed Courgette

Makes tasty and very easy to make lunch.


You will need:

1 courgette/zucchini
125g extra lean beef steak mince
1 tomato (chopped)
half onion (chopped)
Seasoning, salt, pepper
2 tsp parmesan cheese

For salad:

1/2 cucumber
6 radish
bunch of spring onions
1 tbsp low fat sour cream

Cut courgette in half lengthwise. Scoop out pulp, then ad to roasting tray, spray some oil and bake for 15 mins until golden. Meanwhile fry the onions, tomato, mince and pulp, season to your liking. Fill the shells with the mix, sprinkle some parmesan cheese and bake for another 5-10minutes.

For salad, chop cucumber, radish, spring onions, ad salt, pepper and mix it well with sour cream.

Makes 2 servings.
