Healthy Chicken Thai Red Curry

Very easy and quick curry for dinner.

Chicken Thai Red Curry

You will need:

1 Schwartz Thai Red Curry Flavour Shot
200g boneless, skinless chicken breasts, diced
200ml (half tin) reduced fat coconut milk
1 tsp tomato purée
1 small courgette, chopped
100g french beans, halved
1 red onions, sliced

Stir contents of Flavour Shot without the oil, then pour into a large frying pan with the chicken. Fry the chicken for 8 minutes. Add the reduced fat coconut milk and tomato purée and gently simmer for 5 minutes.  Add the courgette, french beans and onion then simmer gently for a further 10 minutes, stirring occasionally. Serve it with rice.
