Vegetarian Biryani

Great for lunch or dinner. Very filling dish, keeps you fuller for longer.

You will need:

130g brown basmati, red camargue & wild rice
320ml vegetable stock made with 1 vegetarian stock cube
1 cauliflower, broken into florets
1 can of chickpeas (400g)
1 onion, chopped
2 garlic cloves, chopped
1 tsp turmeric powder
1 tsp biryani mix power

Fry the onions and garlic till brown, then add turmeric and biryani mix powder cook it for about 3min. Get casserole dish add the rice, stock, onion mix and cook it in the oven 180 degrees for about 40-50min, brown rice mix takes long time to cook. Put the cauliflower in over to roast for 20min then leave it aside. When rice is cooked add the cauliflower, chickpeas and mix it well. It makes 2 -3 servings, can be served with natural plain yogurt dip. Enjoy!
